As I prepare myself for yet another trip to the nursery to purchase more herbs and garden supplies I feel it appropriate to share with you my latest recipe; raspberry popsicles with citrus and lavender essence. Their bright red color is inspiring while their sweet, tart flavor is invigorating. Make a batch for yourself and slurp away summer to your heart's content!

Use the recipe for Lavender Extract on this website. Please note, it requires a 3-4 week wait time!
When ready to use, combine all of the ingredients in a blender and process until smooth. Pour into your popsicle molds. Let freeze until solid, approximately 2-4 hours. If you aren't fond of raspberry seeds, feel free to process the raspberries and cashew milk in your blender first, then strain through a sieve and blend again with the remaining ingredients. Purely optional, but it will remove the seeds that aren't pureed when you blend your pops! Makes 4 double-stick pops.
